Looking for a good baby back rib recipe. I heard a recipe involving mustard but I cant remember it. Oh well any recipe will be greatly appreciated. Thanks.

the mustard was meant to get the rub to stick. If you hit the ribs with a little kosher salt first, it makes it sweat, giving you the same effect.

Simmer them in the oven in 90% apple juice and 10% vinegar for 1.5 hours. Take them out, dry the rack off, and let it cool. Then do a dry rub, wrap the rack in saran wrap, and then in the fridge for a few hours.

Dry rub of choice:

4 tbsp Paprika
3 tbsp dry mustard
2 tbsp tony's
2 tbsp kosher salt
2 tbsp garlic powder
2 tsp cumin
2 tsp chile powder
2 tbsp onion powder
2 tbsp brown sugar
0.5 tbsp black pepper
0.5 tbsp cayenne

Heat grill to high heat, brown on both sides, add BBQ sauce in middle of browning process. Meat comes out tender, sweet, and you didn't spend hours inhaling BBQ pit smoke.

I've been using a modified version of the 3 2 1 method a lot of guys on the bbq forums use. I have been smoking the ribs at 230* for 3 hours, wrap with foil with a couple tablespoons of vinegar added for an hour (rather than 2 hours), then back on the grill for another hour to firm them back up. All you need is coarse salt and pepper on the ribs, but a rub like the above works too. Just depends on what you like. One of the bbq competitors that has been featured on tv adds Tiger Sauce, margarine and brown sugar to the rips when wrapped with foil. I tried that out, but it was too sweet for me. I like a vinegar based sauces over sweet sauces.
